One way to grill the cheese
Pick a locally baked sourdough loaf (pre-sliced or not) and a plain goat cheese, preferably local as well.
Spread the goat cheese over one slice of bread and cover with a second slice.
For those not vegetarian: thick-sliced bacon. Cook bacon in a separate pan and set aside.
**I suggest cooking a good grilled cheese sandwich in a cast iron skillet.
Add a tsp or 2 of unsalted butter to the skillet over low-medium heat. Let the butter heat until just starting to bubble and brown.
Lay the goat cheese sandwich face down and cook for about 1-2 mins. Flip and cook on the other side for about 1 min.
Add the bacon, if desired, and serve with a homemade bowl of tomato soup.
